Storing A Perishable Fondant Cake

How do you recommend storing a fondant-decorated cake in the fridge overnight? It will have a strawberry and cream filling. I'm considering putting it in its pastry box once it's fully decorated, then sealing the edges with scotch tape and covering the entire box with plastic wrap/foil to ensure that no moisture can enter. Does this seem safe? I'm worried about condensation and moisture issues when it's time to let it sit out at room temperature.

I always refrigerate my cakes (both buttercream and fondant) uncovered and they are perfectly fine when pulled out and boxed.  Condensation does occur because of the temperature change but once the cake has sat out for a bit the condensation dries up and all is good.

But you can certainly box it up and store it in the fridge that way as well.  I believe you will want your customer to know that they should leave the cake in the box while it warms up to room temp to prevent any condensation from forming.

As Freckles0829 said, you can to it either way.  I usually do not box my cakes, but I have and they both work just fine.
