When making SMBC the other day I set aside half the egg/sugar mixture for later use. After the fact, I realized I had misread the recipe and was quite short on the sugar I needed. Can I reheat the chilled mixture and add more sugar, or will that wreck it?

I could not answer for sure, but I imagine it would be fine. What do you have to loose?  Give it a try and let us know how it turned out.

yeah sure I don’t see why not — how many days ago?

but my hesitation is in your subject line  — where you say “re-heat” — so depending on what that means — like if you heated it up some then fridged  it — no don’t use it — if you separated it before adding any heat to it yes it’s ok depending on how many days ago — if you heated it all the way up past 155 or so then cooled it off quickly & fridged it — it’s ok to use probably -/

i wrote out all the possibilities I could think of but I still would like to know what you meant
