Okay so I'm new to the cake designing game. I've only used BC under fondant on my cakes, and most requests I've gotten are novelty/character or shaped cakes. My question is what are your fave ganache recipes for different flavors? I want to try ganache because I've read it's much more stable than BC and sets much firmer. But I don't want to compromise the flavor range that I have with BC. I have a fishing themed red velvet cake coming up and I'm lost as to what ganache flavor to use. Also, maybe some thoughts on modeling chocolate vs fondant for the fish construction? I'm thinking of making it with cake dough and covering it with fondant but I'm curious if it would be easier (and tastier) to use modeling chocolate?
