I’m make a dessert table for a wedding. Will mascarpone whipped frosting be stable for this duration? Im thinking no longer than 4 hours.
and just for the record when a whipped cream, marscapone, or cream cheese thing gets 'stabilized -- it means it won't melt -- it never means it's shelf stable because it is not shelf stable --
those kinds of icings are so delicious but not for a catered event where they have to stay out that long
