After quite a few test runs, i finally have a soft, minor grit buttercream that i love. Butter, powdered sugar, vanilla, salt, milk. My only problem now is that it is too soft to form roses. What can i do to stiffen it? I dont want to add shortening because i dont like the taste. I dont want to add more sugar because then its too sweet. Can i use powdered milk to stiffen it?

Meringue powder and cornstarch can be added to help stiffen it up.  I’d add one a spoonful at a time, and taste test as you go.

Is this to fix a batch or for future batches?

For future batches; just cut back on the milk.

To fix this batch; you could make a new half batch, and then slowly add this batch to the new one instead of milk. This way you don't have to worry about adding something that will alter the taste, and you'll have extra to use next time.

Thanks, everyone. I made it again without the vanilla and milk and it came out perfect for my roses.
