Fondant Is Sticking In The Middle When I Stretch In Out, Any Ideas?

Here is the fondant recipe I used, I did not knead in the extra 200 grams, thought it was too much powered sugar. I really like this recipe, I live in DFW area of Texas, if that helps any. This recipe has a nice stretch and rolls out great, but I find that It dents also, like fingernails easily also. I am a newby to fondant any help would be appreciated. 
- 60 ml Non-dairy liquid creamer or fresh whipping cream
- 1 1/2 tbsp Gelatin
- 1/2 tsp Meringue powder
- 120 ml Light corn syrup or glucose syrup
- 3 tbsp Unsalted butter or veg shortening
- 1 1/2 tbsp Glycerin
- 1/2 tsp Salt
- 2 tsp Vanilla extract or other flavorings
- 700 grams Powdered sugar
- 200 grams Powdered sugar for kneading
