Is there anyone from KY that has an APPROVED “shelf stable” buttercream recipe? I have contacted multiple sources (health dept, KY cottage laws group, food safety specialist at the Capital) to confirm what is considered shelf stable, and no one can clarify. The closest answer I have gotten, is that there is not an approved list, however the ingredients cannot be potentially hazardous, and that I can have my buttercream tested. Surely there is another route?
