I has a cake order which requires chocolate strawberries on top. I am hoping I can make them the day in advance as the collection is very early next morning and will not be feasible to do on the same day.

If I make them now (Friday afternoon) is it best for me to refrigerate until the morning? Or am I able to just leave them out at room temp (it's quite cool here) overnight for serving tomorrow?

I know that the chocolate can sweat which I am trying to avoid but also want to make sure strawberries do not go off. Any reommendations on what the best thing to do is? If they did sweat, could I dry with paper towel?

Thanks!

I would make them in the morning as late as possible -- the leaves go first from the washing -- when is it gonna be served -- and that's why you charge a lot for them -- they are last minute pains in the butt --
