Help! I have a client who wants rose gold colored macarons and I can’t find gel coloring to match. How can I color them, especially since I usually add the color to the batter.

I would dry dust the rose gold powdered color onto them after they are baked.  You could color the batter pale pink and dust over them.  In fact, if you colored the batter a dusty rose color and dusted the baked cookies with gold dust, it might give the same effect.

If you dry dust them, steam them lightly and let them dry thoroughly before wrapping.  Steaming will seal the powder and keep it in place.
