Hi

I need some help. I have made Swiss meringue buttercream frosting many times before and it always came out perfect and delicious. I made it tonight and when it was finished I was storing it away in a tupperware for tomorrow and I tasted some and it tasted delicious as always but there was tiny little hard bits in there. I think it may be cooked egg whites but I'm not sure. Is there any way I can remove these from the buttercream or do I have to trash the whole batch?? Has this happened to anyone else?  All replies are appreciated. Thanks so much in advance.

It will be a pain, but you can strain it through a sifter (like you use to sift flour or sugar), which should remove any bits.

Ditto with the sifting!
