Hi,
I am about to cover a massive cake in black fondant and am planning not to use any cornstarch or icing sugar and am using a silicone mat. However, I do sometimes have issues smoothing the fondant onto the cake after rolling out with a mat as it remains tacky...In the event that I have to use some cornstarch to smooth my cake I would like some tips on then how to remove any residue with Trex/Crisco. I have never used Trex to do this but having spent hours reading through posts I think this is the way I am going to go...
But my question is: do you do this on a freshly iced cake or once the fondant has dried?? I can see benefits for both but I'm guessing it has to have dried or else you are going to mark the fondant?
If you use vodka do you wait for the fondant to dry or can this be brushed on once the cake is smoothed?
BTW - I can't reply to posts so thank you in advance for any tips!
Personally I use cornstarch and then clean it off using vodka. I usually do it once I've smoothed it but before it's dry. And then have another go on any bits I've missed once it's dry. I find that trex makes shiny patches so you have to do trex all over or not at all.
Totally agree with louglou, no greasy spots on the fondant. For touch ups, I also use vodka, but you can also lightly steam the covered cake and the residue sort of just melts away.
