Hello All!
Within the last couple of years I have started cake decorating as a hobby. I only do it for family and friends. I am completely self taught and hyper critical of my work. I have uploaded a few pics of my cakes and was wondering if I could get a little constructive criticism on my work. Any thoughts or advice on how to improve would be wonderful. Thank you!
I love your cakes -- they are very sweet and happy -- for butter cream you can take a folded paper towel or smoothy smooth uber clean preferably brand new soft kitchen towel and after icing crusts a bit at room temp like five minutes give or take -- press the folded up towel on any area you want to completely smooth like for example the white of the eyes in the two headed cake --
and you'll want to prepare your cake boards by covering them with food approve foil to spiffen them up -- but if you use florist foil -- use that as your bottom board then keep the cake on a board the same size as the cake and glue that board onto the foil board with hot glue or a swipe of icing --
for concealing plain bottom boards you can also get a small size of the paper lace doilies and cut them in quarters and cut off the pointy tip them slip them under the bottom of the cake all the way around -- over lapping them a bit and that will also dress up a plain cardboard circle -- you know of course for large cake you'll need to stick together two or more cardboard so the boards do not flex at all when the cake is picked up or the icing will crack --
do you make your icing or buy it cans? if you are buying it in cans you can add cornstarch to it so it stiffens up better for you --
I can tell you are working long and hard on your cakes -- keep up the good work --
best to you ![]()
I agree, your cakes are fun and they look great. Your piping is very nice. As -K8memphis said, the only things I can think of are to prep your cake boards to match your cake and practice getting a smooth finish (which is totally not necessary, but a useful technique to learn).
Edna De la Cruz has a bunch of great tutorials on her site, Design Me A Cake. Here is the one that shows how to do the Viva Paper Towel method for getting a completely smooth finish. She starts with a cake that has already been crumb coated and chilled. I believe she failed to mention that you must let the frosting crust before smoothing it with the paper towels. You may also want to watch her tutorial on How To Crumb Coat a Cake. I love her.
