Hi all,

I am making Some mocha brownies and I want to frost them with a Buttercream that gives it the sense of a latte. Way back when I used Wilton’s Decorator Frosting, but nowadays I want to make something myself. I don’t need to pipe anything just sprinkle with cinnamon (like some lattes

Why not use actual whipped cream, stablized with gelatin?

Whipped cream is delicious with brownies and the beauty is, you can make it as sweet or leave it completely unsweetened (which is my preference with chocolate) to suit your taste.  Here is Wilton's recipe:

I guess I was thinking of something that could sit out on the counter. Even stabilized whipped cream needs refrigeration, right?

Yes, it does.  I've only recently tried Ermine icing, which is very light and fluffy and not as sweet as American Butter Cream.
