Hi,

Thanks for the responses to my other two questions. i am experimenting with  pastillage in the microwave so I can make rocks. It is coming out in very falky soft shapes. It's not curing hard enoughto work with.I saw a video where you could cut it with a knife, some flaked of. I can break mine very easily wirh may hand. Any ideas?

I don't really understand what you are saying. Microwave??  Cutting with a knife??  I've only made pastillage once, but it was like a very firm consistency gum paste which had to be worked very quickly to prevent drying out.  It dried very hard.

To do rock pastillage, you need a highly mixed recipe so it incorporates air into the mix  It needs to be mixed enough that it is warm from the friction.  It is these air bubbles that expand and make a rock when heated.  If it is crumbling, you are not giving it enough time in the microwave, or your recipe needs to be kneaded more aggressively in the stand mixer.

I'm impressed you know about this technique!  Not many have seen it, as simple as it is.  Where did you hear about it?
