Hey y’all! 

I want to make some mini cakes (less than 4”). Is it best to bake them in pans or a single layer and cut out the layers? Baking individually gives a more polished edge, but I don’t know what pans to buy either - non fluted cupcake pans? Do they sell tiny pans?

Yes, Fat Daddio makes pans down to 2" in diameter.  Global Sugar Arts has them on sale fairly often.

I made mini cakes for my daughter's birthday.....using the bigger sized tuna cans lol I did not want to buy new pans for something I was doing once, so I washed and washed and washed and ran through the dishwasher. The cakes came out so cute, and I still have all of the cans.

I use cans quite often.  The taller ones make great little, round loaves to stuff a Christmas goodie box.

my mom used cans to bake date bread every christmas time -- some of the cans now have coating in them so myself, i would be hesitant to use them -- if i could find them without the coating i would still line them with waxed paper lining -- but all that said -- i would cut them out of a sheet cake nothing doubting -- bake one thing, freeze and cut out twenty cakes -- much easier than preparing 20 pans and baking twenty individual cakes -- handling 20 items over and over would not be my favorite -- it would make me crazy er -- i'd make the cutter --

and then again i love all cake pans and all cake equipment but i would still cut them out -- i'd glaze them before icing if necessary to control the crumbs --

but y'know those three tier little mini cake pans -- omg -- always wanted one that bakes four cakes at a time -- they bake into one cake but it looks like a little three tier -- be still my beating heart --

Kate, you really are the Crazy Cake Lady!  I like cake toys, but I have no desire for that little tiered cake pan, lol.  Why would you not feel comfortable baking in a can that originally held food?  The lining shouldn't matter because the food is usually cooked AFTER it is sealed in the can?

I agree that it would be so much easier to bake a sheet cake and cut out the mini cakes.  You could use a soup or tuna can for a cutter!

because some of them are coated inside with something and i don't know what would happen if i heated it --

and although i worked for many bakeries -- i was never legal from my home -- so whenever i would do a cake for family or friends over time -- i taught myself to be extra circumspect -- and thought about what i would do if i ever got interviewed by the health department because of anyone getting sick at the event -- so i became as careful as i knew how -- because not being legal would already be a strike against me -- i wanted to be as crystal clear and professional as possible otherwise -- 

also i am on a real ticky diet for my health and to my utter surprise it is working!  well! if i did not go on this diet i would be taking a drug that can cause death by infection, tb, or blood cancer -- and possibly waiting months for it to start to work -- if at all --  i have gotten the so called "rare" side effects of the last four or more drugs i have taken -- food heals or hurts -- it's just my thing to be careful -- i controlled my son's adhd with food thirty years ago -- 

yes i love all cake toys -- past present and future -- i still miss my first 16" sq pan that went up in a house fire, nostalgic favorite --  that's why i can't part with my cake stuff -- but i can't even eat sugar anymore or gluten -- or lots of things -- and i'm fine with that because actually just this afternoon i gotta great report from my doc where i can reduce some of my meds -- WHOOOHOOO

true on the soup or tuna can -- but i want a nice clean edge so it cuts clean so i would make the cutter -- there's no wrong way -- "one baker's never ever do is the next baker's i swear by this"

I am very happy to hear that your diet is working and I wholely agree that if the proper diet prevents medicine, go for it!  

It is rude of me to ask, but are you dieting for rheumatoid arthritis?  I believe you recently mentioned rheumatoid. (If you don't want to answer this question, please disregard and forgive me)  The reason I ask, is that I have the most crooked, twisted hands you've ever seen and it is starting to effect my joints.  I absolutely refuse to take the drugs, because, like you said, they can kill you and arthritis is a whole lot better than dead!  I would love to know if eating a particular way would help.

yes it is for rheumatoid -- it is not easy -- there are many different possible diets -- the one i am on is called the autoimmune protocol diet -- you start out with eating meat, fish, fruits and most vegetables -- pretty strict -- but it works -- it's an elimination diet so after you eliminate symptoms you can add an item back in and see if it makes you flare -- then you can keep it in or delete it -- so that's no eggs, no dairy, no nuts, no grains, no gluten, no coffee, no processed foods, no sugar -- it makes a weight loss diet look like a sunday picnic --

i started 25+ years ago with fibromyalgia and it has slowly gotten worse and worse -- 7 years ago they said rheumatoid -- but i tell you when the temps dropped a couple weeks ago from the 90's to the 60's and it rained and rained and got into the 40's -- i should have been in a fetal position somewhere -- but i am fine -- i am hopeful for the first time in a looong time -- i've gotten off all the ra meds except one and i'm working hard on getting off that one -- i'm also taking a supplement called msm -- you can take from 5 to 15 grams daily and you ramp up slowly -- i'm at 9 grams right now and i'm amazed at how much better i feel -- i'm not hale and hearty but i have so much improvement -- nearly pain free --

there's all different ways to do the diet so don't freak out -- it's a lot to digest to get to the place where you do it -- if you are still interested look up "leaky gut" if you haven't heard of that already -- 

autoimmune means the body literally attacks itself -- and why? one theory is that the foods we eat can leak out into our system from our gut and our system attacks that -- anyway -- 

and i take cbd -- anyway -- epsom salt baths are a real joy -- then a great ointment like acuplus dot com is a wonderful wonderful thing!!

I am so sorry you have had and are dealing with all this, Kate.  I know dieting of any kind is not easy, but, luckily for me, I love all vegetables and fruits.  Of course, I also love grains and sugar, but if it makes me feel a lot better, I could do without it, at least most of the time.  I don't even know if my arthritis is rheumatoid.  My knuckles are enormous and I haven't been able to bend my fingers in over 20 years, however, the pain is not severe.  It hurts when I bang them on something or if I've been doing something that puts a lot of pressure on my hands, otherwise, very little pain.  Maybe it would be a good idea to get some sort of confirmation from a doctor.  I never bothered because there was really nothing that would slow down the progress and I'm not interested in a bunch of drugs anyway.

Thank you for the information.  I will visit those site and see if I think I could do it.
