Hi all,

HELP! In need of some assistance for decorating cake pops. I know the most popular is candy melts. However, I’ve tried and it’s never the right consistency for me. It’s too thick. What am I doing wrong? Any assistance and tips would be greatly appreciated.

I use shortening to thin my candy melts. I add 1tbsp before I melt them, check after melting, then add 1tsp at a time after that if I need to thin it a little more.

I prefer paramount crystals over shortening because with the crystals the chocolate firms up and has a "crack" to it when set.  With shortening, the chocolate coating remains somewhat soft.  It depends on what you're going for, and sometimes what your final decorations may be.
