Hi!

I'm quite new to baking more advanced cakes but now have to make a wedding cake for my brother. I am hoping to get some advice on a few questions.

My cake will be covered in marcipan and stored in the fridge. It will be decorated with gumpaste flowers and there will be some drawings with a food pen on one of them.

How do I best attach flowers to marzipan? I have read that I can wire the flowers and stick them in using poppy sticks, however can I also glue them to the cake with chocolate or royal icing like on a fondant cake? What if my cake is sweating while I attach the flowers?

Will the food pen run when the cake gets sweaty?

food pens do run -- but in my hot humid weather here -- only when i take out a frozen cake into room temp -- if you bring it to room temperature gradually it won't sweat much depending on your local weather -- if it's flavors that have to stay cold then the pens might or might not run -- i always have my final iced cakes in boxes already or right from the fridge into boxes -- so that ensures a gradual temperature rise --

it is certainly possible to glue flowers onto marzipan -- just depends on the angle and how much gravity defying you're going to be doing -- how thick the marzipan is -- should work fine onto a dry cake that is
