I had a cake order over the weekend and the order was for marbled fondant. When I tried to mix the colors together for the marble effect, they did not stick together at all. The fondant was crumbly and peeling. This was rolled fondant and not marshmallow fondant. I layed the fondant out of the fridge 24 hours before so it was room temperature. Does anyone have an idea as to what might have happened?

I've never had fondant to go crumbly, but I mostly use homemade LMF.  I have used Satin Ice and Wilton and they weren't crumbly either, but maybe I am using a different type fondant???  Also, I've never kept fondant in the refrigerator.

Whenever I marble fondant I always knead each shad first to a consistency that I would like if I was just applying it directly.  Then I roll the shades into logs, braid them, twist them and roll out.  I don't keep my fondant in the fridge either.
