I'm making a unicorn cake for a customer and they want to serve 36 people. I'm planning to do 4 -10" rounds with a board in between which should give me 42 servings. Should I only charge them for 36 servings or do I base my price on the actual servings even though they only want to feed 36.

Your cake has 42 servings - - that's what you charge for. The customer will have a few extra pieces to eat the next day. It's impossible to make a cake for a specific number of servings just because that's all the customer wants. Standard sizes are so many servings and it's up to the customer to go bigger or smaller. Charge for what you make.
yes and most bakeries go by a wedding size serving -- you are giving out a lot more cake if it's going to be about 8" tall -- one 10" typically feeds 38 -- so if you are stacking up two you are getting paid half
