I apologize if this is a duplicate question, I looked through the threads and didn't come across my exact inquiry. I am contemplating biting off the idea of doing my own wedding cake... Crazy I know, but hard to pay someone else for what you can do. Anywho, when I make a cake, I prefer to bake my cakes and freeze and then decorate the frozen/cold cakes. Would this method be okay with then freezing the completed decorated cake? I'm thinking it would be okay, as long as I work quickly, the cake doesn't fully thaw, so it wouldn't truly be refreezing? Any thoughts on this, the only way I am allowed to do my own cake is if it ready to go well before our wedding date ... Per my entire family lol

as far as working quickly before it thaws too much -- you can re-freeze it -- no worries -- learned that in serv-safe --

a lot of people do this -- make a tier cake and freeze it -- i actually did it for my wedding almost 40 years ago -- lucky for me it was winter time -- i did not know to thaw it gradually -- like put it in the fridge the night before then you'll be good to go --

you'll wanna pick freezer friendly decor and icings and stuff -- double wrap things -- nowadays i triple wrap anything like that -- since you are freezing -- do it well in advance so you don't go crazy -- a couple weeks even -- if you have hand made gum paste or fondant flowers -- i would hold those at room temp and put on before delivery or after it's set up at the reception -- also train a friend to take your place as the delivery person -- this is good to do well in advance so you don't get stressed --

best to you
