Bananas Foster Wedding Cake Request - Shelf Stable?

I'm a home baker limited to the types of goods I can bake.  Is there a bananas foster cake recipe that is shelf stable - icing/filling included?  I've been asked to quote on this for a November wedding.

not using real bananas cooked or fresh like in a filling -- but probably ok cooked into a cake but i am not positive about that but pretty sure -- but for the run you can do a simple syrup splash

Gretchen's Vegan Bakery blog has a bananas foster cake. I don't bake vegan but I love all her standard recipes that I've tried.  But I think you'll have to find a sub for the fresh bananas, maybe pudding like kcp2264 says.  Fresh fruit fillings just aren't going to be shelf stable; they'll start to mold.  (ugh, once bought a moldy cake at a bakery, yuck). I think the closest you can get will be bananas foster inspired.

you could do a banana flavored buttercream using banana flavoring -- but if it's a banana cake you got that  flavor down -- just get the rum in there with a great vanilla icing and you're there

And can still do a vanilla buttercream for the outside if the bride wants a white cake.
