I am making German chocolate icing for the first time. Eggs, condensed milk, sugar, pecans, coconut, and vanilla.  I need it for a cake I will be frosting tomorrow. If I make it today how do I store it until I need to frost the cake? Or would it be better to make it in the morning and use it once it cools down to room temperature? Thanks!

If I do it tonight and refrigerate it, do I just let it sit out in the morning to come back to room temp before using?

oh i use mine as soon as i'm done making it and it cools enough -- so it can set up on the cake -- then fridge it -- i usually don't make it in advance -- if i had to -- i would spread it out on a parchment in the finished shape i wanted -- like for example an 8" circle for the top on an 8" cake -- fridge it and use it that way --

if you re-melt it -- you would want to get it back to 165 degrees  -- i just don't go that direction --

but my favorite thing to do is pre-measure everything -- then it's just so easy to toss stuff together when needed

In all honesty... I never put the eggs in mine...

And I cheat a little... omit the sugar as a separate ingredient and trade it out for one can of sweetened condensed milk...

I use a regular can of condensed milk too...

My butter goes in the pan with both milks...

I toast my coconut... and use unsweetened coconut...

I grind my nuts fine...

I also never measure anything for it... I just do it by taste and consistency...

I also use it as it cools so it will set up on the cake and/or cuppies and/or brownie...

it is my favorite icing to eat out of the bowl...
