What’s the best way to turn a 2 layer cake recipe into a 3? 

Also if I bake it tonight to be frosted and eaten tomorrow is freezing it after it’s cooled the best method?

Either add a third more of ingredients to your batter to create a 3rd cake. Or cut each cake in half and generously fill with icing and perhaps a curd. Then fill the two cakes generously with same. That will increase your cake height to be almost 3 cakes. I always freeze cakes. Even if it’s just 24 hours. Makes icing and filling so much easier with a cold cake. And makes a moister cake too.

I disagree with that math.  If one recipe makes two cakes, then half a recipe makes 1 cake.  If you want 1 extra cake you need to increase the recipe by half or make one and a half recipes.  And I agree that you can freeze your cake once it's cooled down.
