I’m doing a unicorn cake to feed 15-20 people, for two different customers.  I need to drive them both 2 hours.  I got a lot of questions, I’m sorry!  But any guidance would be soooooo appreciated.  I’m new to cake making!  Making something like this...

http://rosannapansino.com/blog/recipes/unicorn-cake/

1. How tall/how many layers? (For the ombré layers so far I made 4 layers but I did a strawberry cake and it’s super dense.  They are 8in rounds and without frosting only measure about 4in high.)

2. Do I need a cake board in the middle with dowels?

3. I am doing ombré inside for one and rainbow for another customer  - how does that work if I have to do a cake board in the middle?

4. What do you put your cakes in when done and ready to deliver?

5. Should I put the toppers on when I deliver? Or are they ok for travel?

6. Are the toppers best made from MMF or gum paste? Should I put Tylose powder in the MMF?

7. Any other suggestions for securing the cake for travel?

sorry so many questions!  I tried searching the forums and couldn’t quite find the info I needed! Thank you a million times for any info and your patience for a newbie!

If you're not stacking anything on top of the cake, or making the unicorn a top tier, you don't need a cake board in between anything, just one underneath the cake. The height is really dependent on what you like. My finished cakes are usually about 4 inches tall. I bake 2 layers and torte them in half to give me 4 thinner layers. My finished cakes go in a cake box, then I put it in the fridge (not a necessary thing to do) until delivery. I don't deliver my unicorn cakes with the horn attached (my preference) I set it inside of another box and place when I get to the location, but everything else is fine to go ahead and place on. If you're using MMF, I would add the tylose. What about a "presentation" base for your cake to sit on? Are you using a cake drum, more cake circles, plywood, foamcore? I usually make my base 2 inches bigger than my bottom tier, so I would have a 10 inch board underneath the 8 inch board. I like to make sure my cake box is big enough to fit my board snug so that the cake can not slide around during transport. Hope this all makes sense, I'm tired lol
