How Far In Advance Can You Bake The Cakes

I am preparing for a wedding cake and I am wondering how many days in advance can you bake the cake? Thank you for your help on this project.

You can bake it 3 months in advance, if you wrap the layers in a couple or three layers of cling wrap, then with aluminum and put them in the freezer.  Freezing cakes actually gives them a better texture and moisture.  All you need to do is remove the from the freezer a few hours before you want to work on them and let them come to room temp, or near it, still wrapped in their coverings.

yep, the cakes will freeze beautifully! Once they thaw and you start crumb coating, you can keep them in the fridge or refreeze as needed, as well.  At that point, I’d thaw in the fridge.

If you’re worried about them drying out, they should be fine after you crumb coat, but simple syrup on your cakes will help, too!
