Lemon Bars, Brownies And Cupcakes

Hello everyone, 

I am making Lemon Bars, Brownies and cupcakes for a wedding on Saturday. About 250 of each do you think that if I start baking today and put in airtight containers in the refrigerator will they keep until Saturday?

Just want to get ahead of the game.

At this point you are only a day and a half away.  So they will be just fine if you start backing.  In fact, that is a lot of baking so I would be starting ASAP because I couldn't imagine trying to get all that done in one day.

I see no reason to refrigerate the brownies or even the cupcakes until after they are frosted (and even then, depending on the frosting and the temp in your house it may not even be necessary).

So I would go ahead and get the brownies and cupcakes done today/tonight.  Tomorrow do the lemon bars and frost the cupcakes.  Then box everything up and keep what needs to be cold, cold until delivery on Saturday.

Holy moly,  I would have baked weeks ago and froze everything. No way could I bake that many portions in 2 days!! Not even with a commercial oven. Great advice from Freckles0829.
