Hi all,
Can you help, I am making a sugar paste coated sponge cake with a look alike lake in the centre. the water effect will be a gel. it will be about 3 inches deep. i also have sugar paste fish, reeds rocks etc. Only the big problem i have is to make the sugar paste water proof with an edible glue to stop them melting whilst the gel sets. any ideas?
regards
Because you're talking about edible products, there is nothing that is "waterproof"--because something waterproof wouldn't be digestible.
Cake gel doesn't really have a lot of free water in it, so things don't melt that quickly when placed in it. Chocolate is pretty good for things like this. Pastillage is good, too. For items that will have to stand up, out of the gel, coating the submerged part in chocolate will help them remain upright.
If I were doing this cake, I'd do the pond at the last minute--literally. If it's really going to be 3" deep, I'd also coat the sugarpaste with some chocolate before adding the gel.
I did a swimming pool cake made from fondant and piping gel with gum paste figures submerged in it and they did not deteriorate at all.
I made a swimming pool cake for my grandson. I gave his Mum a jar of blue piping gel to add as late as possible - worked well. Perhaps you could set it up with gel, fish, reeds, etc as late as possible, preferably at the venue. I like Maybenot's idea of coating the (submerged) pieces in chocolate.
Why does it need to be so deep?
