Mousse Cakes With Mirror Glaze - Need Help!

For the past couple of months, I've been trying on and off to work on mousse cakes, topped with a beautiful mirror glaze finish. I used one recipe without eggs, and one with. Both of course had gelatin. I'm trying to figure out why both never come out perfect out of the mold. Either they break, it's chipped at a side, or if it comes out clean, it's never smooth. By the time, I place the mirror glaze on the mousse, its imperfections show. I don't know what to do. Maybe my recipes don't have enough gelatin (1 Tsp,), or maybe the egg recipe needs more than 2 egg yolks?
Can people share their methods to making the perfect mirror glaze mousse cake?
I want it smooth like this.
