Hello. Hoping for some pointers. I am by far a professional cake decorator but enjoy having a go which led my sister asking me to decorate her wedding cake! It’s 3 tiers and I would like to have bottom tier smooth fondant middle tier Swiss buttercream rose swirls and top tier smooth fondant again....it’s a square cake. Should I pipe the rose swirls on the middle tier once it’s stacked? I will be doing this the day before the wedding how should I store it as too big for fridge! I have a box for it once stacked. you can borrow my fridge -- it's sitting empty waiting for a nice cake like yours to cuddle --

can't you make room in your fridge? throw stuff away -- move the shelves -- 

but yes you need to do the roses after stacking -- 

you could make a refrigerator box too -- get each tier cold through and through then build an insulated box for it out of corrugated cardboard -- you can have a place for ice cubes or freezer packs to keep it chillified -- might have to replenish the ice factor -- should be kept cold is my best advice -- can it be done without the fridge yes but not by me -- I always fridge --

what size are your tiers

Why not just stack the cake and pipe the roses at the reception site?  This way you won't have to find space to store a fully stacked 3-tiered cake, but rather space in your fridge for 3 separate cakes which would be a bit easier since the height isn't an issue.  And bonus...you won't have the stress of transporting a stacked cake.
