I Need Help! My Customer Got The Date Wrong.

I need some advice please. My customer told me she needed a cake for the 17th. I just got through taking my cake out of the freezer, putting it together, and applying the crumb coat. While it was crusting over I sent her a message to make sure when she was going to pick it up. She replied back it's the 24th not the 17th. She forgot to let me know the date changed. Now I have a crumb coated cake. What should I do with the cake? Can I freeze it again with the crumb coat on it? I've never had this problem before.

Absolutely you can freeze your cake with the crumb coat. I’ve done it many times. Just wrap up carefully as you did before and refreeze.

Ditto what jchuck said!  I had the identical same thing happen in January.  I refroze the cakes and they were just fine.

This just happened to me this weekend! I made the cake and had it completely ready to go for Saturday, and the date was actually supposed to be Monday. I had thought to throw the entire thing in the freezer decorated, but I've never done it and was crazy nervous about it. So I completely wrapped it in Saran Wrap and had it in the fridge until Monday morning. This is the 3rd cake I've done for her, and she said it tasted just as good as the others so that definitely made me feel better. lol
