Do cakes with fillings freeze okay, in this case, ganache and lemon fillings, or do they separate and get slippery. Most of my cake have to travel for at least an hour.
I know ganache freezes well, but I guess it depends upon the type filling. I have also frozen cakes with buttercream filling, which also works, but I have no experience with other types of fillings. I have frozen homemade lemon curd in boxes, but not in a cake. It also worked perfectly.

Yes, I have frozen cakes with lemon curd filling. But because I knew I was freezing my cake, I put a scant amount of buttercream on the cake first before adding my curd. When thawed and eaten, was perfectly fine.
