Hi, help, heh. 

So I've made a mud cake for a wedding, with the intention to frost it nakid style with SMB buttercream. As I know the bride personally as a friend, the design has concluded onto a nakid style cake. 

I had already fully frosted the top cake the day before, and put it into the fridge to harden. Then I intended to smoothen and declaw some of the frosting back with a plastic scraper to create the nakid look. 


Whilst I was clawing back the frosting I noticed that what i was clawing back looked separated and oily. The cake looked fine. But the frosting on the scraper did not look ok. 

The wedding is tomorrow. The scraped down cake is back in the fridge but now I am worrying that whilst the ceremony is going on, and the cake is sitting out in the table, it'll melt into some sort of frosting mess. 

Anyone had a similar experience or can reduce my fears? It's due to be approx no more than 23 degrees C tomorrow and the cake needs to sit out from the fridge from 830-12 noon.

i don't know -- it might weep on you but that's not necessarily a super bad thing -- idk -- i would take it apart and refill and ice it with fresh icing -- is it filled with the icing that separates? how big is it? i would take it out of the fridge today and see what happens -- i couldn't let it out like that myself -- i know that's not your favorite answer because i would Hate to have to that too but tha'ts what i would do --

I agree with -K8memphis.  Being the worry wart that I am, I would remove as much of the original frosting as possible and redo with a new batch of frosting, just to be safe.

I believe it is because it is cold.  Let it come to room temperature and then check it.  The butter separates from the sugar syrup if the frosting is mixed or disturbed while cold.

The undisturbed part should be just fine.  Let it come fully to room temp before checking and smoothing it further.  HTH

I never use SMB, so am unfamiliar with its properties.  Yes, that is good to know!

I use it but only room temp -- once it's fridged it does change so I never disturb it after it's cold -- make it and use it right away
