I recently saw a FB video where someone added butter to isomalt. I am brand new to using isomalt - I’ve only played with it a couple times, but I need a new challenge other than cakes. Has anyone tried putting butter in isomalt? What does it end up doing to the isomalt?

Thanks!

The only reason I can see to add butter to isomalt would be to make some form of sugarfree candy that would resemble caramel.

Werther's sugarfree caramels use those ingredients:

INGREDIENTS: MALTITOL SYRUP, ISOMALT, SORBITOL SYRUP, PALM FAT, BUTTER, CREAM, ARTIFICIAL FLAVORS, SALT, CANE SUGAR SYRUP**, SOY LECITHIN EMULSIFIER, ARTIFICIAL COLOR, SUCRALOSE.
