Hi Bakers,

I have to make a two tiered cake with the design below. My question is can I use ganache to crumb coat and then use this technique to decorate the outer layer? I will be making the entire cake ( baking, decorating and completed)  5 days earlier and freezing it. On the day of the party it will then travel 3 hrs to reach its venue. Will this approach work? if anyone has a better plan to go about the preparation part please help. due to the time and technique involved I plan to use American BC as opposed to smbc, though I like the later better. plz help. thank you.

I see no reason why you could not do everything exectly as you planned, except add the fondant fish to the cake before freezing it.  You should wait until the cake has been removed from the freezer and thawed to add the fish.
