Marzipan To Cover And Decorate Cake
Decorating By Menna Updated 26 Jan 2018 , 9:09pm by SandraSmiley
Hi,
I have been asked to bake a caramel cake with caramel filling for a little girl birthday party and the lady insists of covering the cake with just marzipan, she doesnt want fondant or icing.
So it is possible to cover a whole cake with just marzipan ? And can I decorate it as normal cake covered with fondant ? She wants to have a little unicorn, flowers and butterflies.
Also, can i cover the cake and decorate it a day ahead ?
Sorry lots of questions but i have never worked with marzipan before.
Thank you :)
I've never done this, but since no one has replied, I will relay what I know. My British friends cover cakes entirely with marzipan, but I think it is a bit trickier than fondant. They will then usually cover the marzipan with royal icing or fondant, but it is not necessary.
You can decorate your marzipan that same as fondant. Yes, you can make it a day ahead.
I guess my question is how would you get a nice smooth finish with the marzipan if you are not using any icing? Wouldn't the layers show along with any possible lumps and bumps from the cake without a crumb coat/smoothing layer of icing?
You could certainly add a crumbcoat, if you wanted to. From the cakes that I've seen, marzipan is rolled quite a bit thicker than fondant and it is not as soft, so imperfections on the cake shouldn't show through so easily. I am planning to make marzipan in a few days for a fruit cake....first time trying this, but it's another traditional British thing. If you are still interested, I will let you know how it handled.
