I was asked to make a strawberry mousse cake...and decorate with a sitting sheep figure.
If I make the sheep with gumpaste and put it on mousse, it'll start melting ![]()
I was wondering if you have any suggestion. Modeling chocolate (never made it)? Some kind of base in between? Many thanks!!
Use a disc of chocolate. You could pour out a small disc, let it set then pour out another layer on top and set your gumpaste sheep in it. Once set it should be sturdy if your chocolate is tempered well.
I am crud at tempering chocolate so I melt up some nice chocolate and then add some cheap nasty baking compound chocolate to it. If you balance it right you will get nice tasting chocolate that sets well.
Also I would only put the gumpaste decos on last thing before serving or they may melt when they are brought out of the fridge anyway due to condensation. (I am assuming they will be kept in the fridge prior to serving)
Personally, I think modeling chocolate is the best thing since sliced bread, but it does have a learning curve. You would not have to worry about it melting.
