Can You Freeze Ganache And Modeling Chocolate

I am making a cake for a 50th anniversary party that was scheduled for the 14th, but I just found out that it has been postponed until the 21st. I already have the white chocolate ganache made. Can I freeze it or would it be better to just keep it in the refrigerator? Would it work for me to ganache the cakes and freeze them? They have already been torted and filled with buttercream.
