Ice Cubes In A Jelly Cocktail

Hi, can anyone help me out please with some advice. I am making a cake and part of it is a glass with a cocktail in it. For ease I'm going to use a real glass but the cocktail needs to be made and have lemon and ice cubes in it. My initial thought was to use Jelly to make the cocktail and put a slice of lemon in it before it sets. I'm stumped as to how to make the ice cubes though. I did wonder about jelly but it will melt when I put the cocktail jelly in. Then I wondered about sugar but I think that will melt too. Has anyone got any suggestions please? Many thanks in advance.

Sounds like a job for isomalt.  I've never used it myself but I've seen it used for "ice cubes" on HGTV baking competitions.
