Hi! I am so new to cookie decorating and am planning to gift some cookies for the holiday season. I made a large batch of royal icing a couple of days ago to use as I create the cookies, I used meringue powder and not egg whites.

The icing has gone from the counter, to the fridge, to the counter a few times now. I feel like this is a bit of a silly question to ask, but I haven’t ended up using it since it’s been made, is it still okay to use after being in and out of the fridge and now being stored at room temperature consistently?

Thank you so much, I googled around a bit about it and didn’t find anyone inquiring about in-out-in-out from temperature to temperature type of thing. It’s been on the counter now for a couple nights since being in the fridge. I just want to make sure it’s still okay before using it on cookies that someone else will eat.

It's fine. I never store my royal in the fridge, only on the counter. I don't have the patience to wait for it to come to temperature lol

If your royal icing is from meringue powder, you never have to refrigerate. If made from actual egg whites, then you must refrigerate and use fairly quickly.
