Hello all!  I do a lot of sculpting in modeling chocolate, but usually it is figurines.  I have an upcoming super hero cake that I would like to do as a bust with the base and body made of cake.  The head, shoulders and arms will be Rice Krispy Treats.  Since I have never won any awards for speed, is it possible for me to make the head and shoulders from RKT's, ganache and maybe even modeling chocolate then freeze.  That way, I only have to do the cake and sculpt the body portion right before the due date.   I've never frozen ganache or modeling chocolate, but I feel like ganache would do OK, but I am really unsure about modeling chocolate.

If anyone has experience with this, I would appreciate your expertise!  Thanks!

I’ve frozen leftover ganache and modelling chocolate, separately, and they were both fine. Perhaps you could do a test run by covering some  RKTs, freeze them, thaw them and see how they fare. ( To thaw them I would leave them in the fridge overnight or for several hours, and then at room temperature until thawed.)

I freeze ganache all the time, I pour it into a plastic container, let cool at room temp, put gladwrap across the top then pop the lid on and freeze.

I have it frozen for a few weeks to a month and it does just fine.

Ganache can definitely be frozen.  Modeling chocolate doesn't really need to be frozen as it keeps very well in the fridge.  I've stored both successfully.

Not 100% about the RKT pieces.  I'm guessing the moisture in fridge/freezer would soften it.  I HAVE stored dried RKT pieces for a long time cool room temp in a closed cardboard box.  If you don't already, mix a tiny bit of modeling chocolate in the RKT mixture for stability. I read that here on Cake Central years ago.

Thank you so much, Cher2309b, bubs1stbirthday and PattyT, for your advise.  PattyT, it totally went over my head that I would not need to freeze the head, shoulders and arms, which would be RKT's covered in ganache and modeling chocolate!  Duh!  I am over thinking this already!

Thanks, again!!
