We are having a terrible time turning out Divinity. We are at 3500 feet. The various recipes we have tried all suggest boiling to 250. We've tried boiling to 250 , fail, and compensating for the altitude by boiling to 244, deducting 6 degrees, fail. We get the same result. The Divinity looks lovely, but never sets up. It is like nougat or soft glue. It doesn't matter how long we leave it.

It so sad to put the time in and see the waste of food when it doesn't work. Can someone suggest what we might be doing wrong?

ts so easy to fix here is all you have to do if it flops on you and looks like a pancake lol FIRST OF ALL GET A MICROWAVE SAFE BOWL, A BIG ONE BECAUSE IT WILL SWELL UP ALOT. PUT YOUR FAILED DIVINITY IN THE BOWL ,THEN PUT IT IN THE MICROWAVE ON HIGH ABOUT 2 MIN .YOU WILL KNOW WHEN ITS READY IT WILL SWELL UP AND START BUBBLING. TAKE IT OUT OF MICROWAVE AND PUT ABOUT 3 TO 4 TABLESPOONS OF POWDERED SUGAR IN IT ,THEN STIR FOR ABOUT 2 MIN AND PUT IT IN YOUR FREEZER FOR ABOUT 4 MIN .TAKE IT OUT AND STIR ABOUT A MIN AND IT WILL SET UP PERFECT, NO PROBLEM .HAVE FIXED SEVERAL BATCHES LIKE THIS NEVER FAILS
