Client wants a large(about 6-8 inches tall) upright replica of this on a retirement cake.  The patch is so detailed.  Do I paint? Do I cut out fondant/gumpaste pieces and put it together on a gumpaste/fondant patch cutout? I hesitate to use edible image because in large form it might be obvious it was a printed image and might look tacky. How would all of you experts do it?

I would do it with royal icing.

In my opinion..royal icing would work well. But painting it on fondant would work well too. You can do greater detail with a fine tipped paint brush than with a tip, though both are great to do. I paint on fondant a lot and you can do good detail with it. Hope it works well!
