Help!  I am trying to make slate blue velvet, gluten-free mini cupcakes for a wedding.  I'm using a gluten-free cake mix, which is still coming out yellow even though I am only using egg whites.  I cannot get the right color!  I've tried Wilton paste Cornflower blue, royal blue with violet, and all come out a weird, blue green, dense teal color. I cannot find a gluten free WHITE mix.  Any ideas out there? Thanks for your help!

it's just a chemistry experiment if you get the right color -- and a lot of gf flours are not bleached or at least they are colored -- and i mean white milk makes yellow butter so the side effects of adding anything to anything can be a dramatic change --

all that to say if i had to do this i would go with royal blue and black  -- but honestly it's just a miracle if you get it -- then add in the heat of baking --

another completely different way -- idea for you is i would try some blueberry filling swirled into the batter -- just swirled though -- so it shows a similar color but not all mixed in --

best to you --- lemme know how it goes for you
