Hi, I've made Michele Foster's Fondant many times now successfully but just made it and it turned out a frustrating mess. I don't know if I added to much powdered sugar or not enough- I used almost exactly 3.5 lbs but the fondant wouldn't stay in a ball on the hook. It seemed dry yet was very sticky and difficult to work with when I took it off the hook, which I finally did because my KA motor was so hot!

It is pretty hot here in Los Angeles so maybe the humidity changed things. The only other things I changed were to use half and half instead of cream and I accidentally strained the mixture twice- first into a bowl while hit and then into the powdered sugar when lukewarm but I don't think those things would affect it. 

thoughts? I finally kneaded it by hand and wrapped it up but it seems off.

I live in LA too and lately my fondant game has been a bit off. It's a lot more humid lately so I think you should add more powder sugar. I would use exact same recipe and then knead it by hand and add a little powder sugar at a time till the consistency feels better. Also I think the half and half could have messed up the end results as well. I would go back to the old way and mix the first part in the mixture and then finish it by hand and add a little powder sugar at a time till it feels right. Hope that helps
