I am making 300 mini cheesecakes for a friend 's wedding. They are perfect frozen. However, the wedding is outdoors in July. How can I keep them cold/ frozen during the wedding and reception? I'm thinking dry ice plates but where can I find them? Help!

Sorry, @jaimim ‍, I haven't a clue!  Never heard of dry ice plates.

dry ice plates would burn guests if they touched it -- the cakes would be too cold to serve -- typically you forego the 'display' part of the food when it's an outdoor event -- in other words you just serve it at the last minute -- very little display time if any in the case of mini cheesecake in july --

you could make a refrigerated set up of some kind but it would be quite a production and there's no guarantee that the temperature of the cheesecakes above it on display would be maintained to proper setting --

it's a vastly time consuming, resource depleting dessert to serve outdoors in july -- beyond practical/feasible -- not utterly impossible but why go to those great lengths? when 10,000 other things could be served

yes it freezes -- meringue as in swiss meringue buttercream
