Trying to figure out how to do my next wedding cake. She wants a very tall tier and I have never done that.. Not sure what size pan to use and how tall to make it.. The cake needs to feed 96 or how to properly support it.. Thanks for all suggestions ahead of time
just treat it like a three tier cake -- where the bottom two tiers are the same size -- using a board in the middle that is carefully cut just smaller so it doesn't show or want to pooch out when smoothing the icing -- easy peasy --
this is one of those times when you want to decide if you are going by silhouette or by servings -- this cake in the pic is petite and you'll lose a little bit of the visual making it a 10x10x7 to get the servings -- just not the same -- oh wait it'll need to be 10x10x8 to get 96 -- wah wah --
because that cake looks taller than it's circumference -- while a 10" cake -- that's needed to get the servings -- will be shorter than it's circumference and look different -- kwim
So how many layers should I do to get that many servings and height.. You said 10x10x8. Does that mean it needs to be 10 inches tall?
what i meant was you have a 3-tier cake to serve 96 -- a ten inch tier, another ten inch tier then an eight inch tier on top of those two ten inch tiers -- i wrote it like this 10x10x8 -- cake tiers are typically 4-5 inches tall --
the silhouette of this 96 serving configuration is where it might not look like the picture -- but if you keep the flowers the same proportion it can come out closer to the pic --
you could add a layer of foam under the 10" tiers to boost the height -- just ice it all like it was one tier -- just depends on how identical you want it --
