I wanted to reach out to you all for some advice regarding a Swedish Princess Cake I am making. I am worried about refrigerating it due to moisture affecting the marzipan covering. To add to it, it has whipped cream under the marzipan. I am in Florida, so we have high humidity. Am I worrying over nothing?

Thanks,

Nancy

well you have to keep whipped cream in the fridge so if the marzipan weeps that's the result of how you planned the cake -- you really shouldn't even bring it to room temp -- you need to keep it cold

Thanks,  for your feedback. I made it and all went well. I have a culinary degree and been baking for over 30 years and was taught to never refrigerate fondant. I researched a few recipes for Swedish princess cake and they all have the whipped cream icing so I figured it should be good as long as it is kept in the fridge like you had stated. Have a great day.
