I plan on making a rainbow layer cake, using a white choc mud cake, white choc ganache and topped with fondant. My question is what flavour could i add to white choc ganache to make it more tasty? Apart from the obvious raspberry and white choc. Thanks!

You could add mint extract. Or more vanilla extract.

Any number of flavors. I added butterscotch to my cream last time. Was really yummy...

You'd want to add a flavor that's consistent with the theme and colors of the cake and also the white chocolate.  So probably not pistachio or coffee or mint, for example.  The rainbow colors make people think of fruit, like Fruitloops cereal. So if you picked a particular fruit/berry, which one would you pick? And white kind of fruit would be good mixed with white chocolate.  How about pomegranate, for example? Yes, there are pomegranate ganache recipes.  But if it's important to keep the frosting white, I suppose you could do coconut, for example.  But have you thought about fruit fillings to complement the frosting instead? Like pineapple, for example.

Yes I had thought of a fruit filling, for example a smear of passionfuit syrup/jam then top with ganache or maybe passionfruit buttercream for in between layers. No idea how that combo would taste?! Im only new to cake decorating and usually stick to choc mud cake so a little lost when it comes to white choc ideas

I really like a small amount of lemon extract. It's subtle, goes with everything. Gives give the white ganache a lovely flavour, and lemon cuts the sweetness.
