First Timer At A Dessert Venddor - Heelpppp!!!

Hey everyone!
I'm in desperate need of any advice/suggestions. I've signed up to be a vendor at a festival that's happening in April, target audience for the festival is mainly kids and families. They had approx 5000 ppl attending last year and it has been slowly increasing year over year. I am planning on doing a few desserts:
cupcake sundaes - targeting kids
huge chocolate chip cookie sandwiches filled with buttercream frosting
rocky road squares
either a bark or coconut macaroons
I need help trying to figure out how many items to have - I feel 3 is too little....but husband thinks I'm nuts for doing more. As well as figuring out how many of each item to make. So far with all my googling I've come across the 4% rule - if 6000 people are attending this event, only 4% will come to me - meaning only 240 people. So how many desserts do I have? of each?
Any help is greatly appreciated!!!
I've not heard the 4% number. From my experience, it's 10% as to how many people will purchase. It also depends upon how many other vendors will be selling similar items.
Whether you're doing a fair or farmers' market or selling products in a retail store, everything is a guess. Seriously, that's just the way it is. So if I were in your situation, I'd guess 10% and assume another vendor will be there dropping the number to 5%. I'd bring 300 pieces of all four items you mentioned.

Perhaps I should explain why I had the 4% number, when I was doing research online I couldn't find any numbers to use for dessert vendors, I was only able to find multiple sites for hot dog vendors - silly of me I know but I was really desperate for some sort of baseline.
Based on last years festival, they had 3 dessert vendors, do you think I should reduce my numbers even more?
And stick to 4 items not 3?
