Quantities For Office Building Sales

Hello! Have a question I'm hoping someone could help with. My bakery is taking part in a two-sale at a corporate site. Our booths will be set up right outside the cafeterias over the lunch hour. One day there is the potential for 2,000 employees passing by, the next day the potential for 1,000 employees. I will be selling two kinds of cupcakes and two types of cookies, but I will not be the only vendor selling. Does anyone know a good rule of thumb for calculating the quantity? I know there is no exact science, but I'd like to come semi-close. Any help will be appreciated-- thanks in advance!
This sounds like a great opportunity! The basic rule for fairs: 10% of the crowd will purchase baked goods. And that would be split up among similar vendors, so it would be good to find out how many other vendors are selling cookies and cupcakes. Good luck!
